Year 7- Kids cookies. Love their individual designs.

Homemade cookies (recipe below)






Homemade chunky choc chip cookies

 Preheat oven to 180'C -Makes approx 12

Ingredients:
125g margarine or butter
½ Cup brown sugar
drop vanilla
1  egg
1¾ C SR flour
125g chocolate chips 
(can mix 50 gramas white and milk choc together)

Method:
  1. 1. Cream margarine and brown sugar
  2. Whisk together the egg and vanilla, and add slowly to the margarine mixture
  3. Mix in sifted flour
  4. Add chocolate chips
  5. Roll teaspoonfuls of the mix into small balls, and place onto a lined or greased baking sheet; flatten slightly with the back of a fork
  6. Bake in a moderate oven for 12 – 15 minutes
  7. Cool on a tray for a few minutes; the biscuits harden as they cool
  8. Slide off baking sheet onto a cake cooler and allow to cool fully.

Another variation: Chocolate Oat Biscuits (recipe below)

Preparation time-20 minutes

Preheat oven to 160ÂșC
Cooking time- 15-20 minutes
Makes approximately 12
Ingredients:
½ Cup rolled oats
½ Cup Plain flour
½ Cup granulated white sugar
⅓ Cup coconut
100g chocolate chips (can be a mix of 50g each choc & white choc)
70g margarine or butter, melted
½ Tbsp (10g) golden syrup
1/2tsp bicarb
1 Tbsp boiling water
50g each milk and white chocolate melts, to drizzle over for the decoration
Method:
1.         Blend together the first 5 ingredients in a large mixing bowl.
2.         Melt margarine and golden syrup together.
3.         Combine bicarbonate of soda and boiling water, and add to the hot butter mix; then mix this into the dry ingredients, blending well.
4.         Roll heaped Tablespoonfuls of the mix into small balls, and place onto a lined or greased baking sheet; flatten slightly with the back of a fork
5.         Bake in a slow oven for 15 – 20 minutes until light golden brown.
6.         Cool on a tray for a few minutes; the biscuits harden as they cool
7.         Slide off baking sheet onto a cake cooler and allow bickies to cool fully.
8.         Melt extra chocolate separately and drizzle over the cooled biscuits in a grid pattern.              Students love these!

Year 7 Thai chilli chicken with steamed jasmine rice.




Thai Chilli Chicken and steamed jasmine rice.
(this is truly delicious and sooooo easy!)


 Ingredients: 
 500g chicken tenderloins

2 Tbsp oil
1 medium brown onion
2 Tbsp finely chopped small fresh red chillies
1Cup fresh basil, shredded
2Tbsp fish sauce
1tsp chopped fresh coriander root
1 ½ tsp brown sugar
1Cup  coconut cream

Accompaniment:
1Cup white rice, boiled, to serve

Method:
1.     Remove fat from chicken; cut into 1cm strips
2.     Heat oil in a wok, or frying pan; add onion and chillies; stir-fry until onion is soft.
3.     Add chicken; stir-fry until chicken is tender. Add basil, fish sauce, chopped coriander and sugar; stir-fry for 1 minute.
4.     Add coconut cream; stir mixture until heated through.
5.     Serve hot immediately with rice.
